Ingredients
- ¼ cup of butter
- 2 eggs
- ⅓ cup of sugar
- ½ cup of flour
- ¾ teaspoon of vanilla extract
- ⅛ teaspoon of salt
- Lemon zest to your liking (recommended 0.5 tablespoon)
- ½ cup of chocolate chips
Directions
Step 1: Preheat the oven to 375 degrees. Butter the madeleine’s baking pan (if you don’t have a baking pan specifically for madeleine’s l would recommend using a muffin tin). Set aside for later use.
Step 2: Melt butter in the microwave and leave it to cool at room temperature
Step 3: in a separate bowl, crack two eggs. Add salt and vanilla extract. Mix until smooth
Step 4: Next, into the bowl stir in ⅓ cup of sugar and beat until the mixture is thick. This will likely take 3-5 minutes.
Step 5: Sift in ½ cup of flour. Be careful not to overmix! The flour should barely be incorporated. This will help keep the texture of the madeleines light and fluffy.
Step 6: Add the zest of a lemon into the mixture. The amount is really up to preference. If you prefer less lemon flavor add less, and vice versa.
Step 7: Add a generous amount of batter into each tin. Rule of thumb would be adding about a tablespoon and a half into each tin. However, overall the batter should make 10 to 12 madeleines
Step 8: Bake the madeleine’s in the oven for 14 minutes or until lightly browned. Once they finish baking, take them out of the oven and leave them in the tray for 20 minutes to cool down. After, take the madeleine’s off the tray and place on a plate.
Step 9: Melt ½ cup of chocolate chips in the microwave for one minute. Dip the cooled madeleines halfway into the chocolate. Place on a tray and refrigerate for 30 minutes or until the chocolate hardens.
