Ingredients:
- 6 egg whites
- ½ cup and 2 tbsp sugar
- ½ tablespoon vanilla extract
- 2 tsp cornstarch
- 1 ½ cups heavy whipping cream
Directions:
- Preheat oven to 255 degrees.
- Beat egg whites on high speed for about 1 min. This should form soft peaks.
- Gradually add ½ cups of sugar with the mixer on.
- Mix for 10 mins until stiff peaks form.
- Fold in the vanilla extract.
- Fold in the cornstarch.
- Bake for approximately 1 hour 15 minutes.
- Turn off oven, but leave in for 30 minutes with the door closed.
- Take out and cool until it reaches room temperature.
- Combine heavy whipping cream and 2 tbsp of sugar.
- Beat on high for 2 minutes.
- Top with fruit and whipping cream to serve. Enjoy!
